  1. Washing

First, fresh potatoes are brought into the factory and washed. This process usually uses a drum washing machine, where water and brushes can remove dirt and impurities from the surface of the potatoes. The cleanliness of the washing will affect the taste and color of the finished product, so the factory usually rinses repeatedly to ensure that the potatoes are completely clean.

 

  1. Peeling

After washing, the potatoes need to be peeled. Some modern factories use steam peeling technology, which uses high-pressure steam to quickly soften and peel off the potato skin, and then rinse it with water. Some use mechanical peeling to remove the potato skin by rubbing with brush.

 

  1. Slicing

Next comes slicing, which is one of the key steps in making potato chips. The slicing machine cuts the potatoes into uniform slices according to the set thickness. The thickness of the slices directly affects the taste of the potato chips: if the slices are too thick, they will not be fried thoroughly during frying, and the potato chips may taste hard; if they are cut too thin, they will easily become crispy or even crumbly. Usually, the factory controls the slice thickness between 1.2 mm and 2 mm to achieve the best taste.

 

  1. Blanching

Cut potato slices usually go into the blanching process. Blanching is to quickly heat the slices with hot water to remove starch, stabilize the color, and reduce the amount of oil absorbed by the chips when fried. The temperature and time of blanching are very important for the taste of potato chips. If the blanching temperature is too high or the blanching time is too long, the internal structure of the potato chips may be destroyed, resulting in a soft taste; if the temperature is too low, the starch removal effect is not good, and the finished product may contain too much oil.

 

  1. Frying

After blanching, the potato chips are fed into the frying machine, which is the most critical step in determining the crispy taste of the chips. During frying, the oil temperature is generally controlled between 160℃ and 180℃. The high temperature quickly removes moisture and makes the chips crispy. The frying time is very important. If the time is too short, the chips may not be crispy enough; frying too long will make the chips too hard. Through precise temperature and time control, the factory ensures that each chip reaches the ideal crispness.

 

  1. Seasoning and packaging

After frying, the chips are sent to the cooling area, where they are seasoned. Salt, pepper, chili powder and other seasonings can be added to enhance the flavor. Finally, the chips are sealed and packaged by an automatic packaging machine to ensure the freshness of the product.
