Sharp stainless steel blades continuously slice the potatoes into uniform thin slices. The sliced potato chips then pass through the discharge opening to the next process (such as washing or blanching).

Slice thickness is one of the key parameters affecting potato chip quality, typically ranging from 1.2 to 2.0 mm (adjustable).

2. Sharpness of the blades

Dull blades will compress the potato tissue, resulting in a rough cutting surface. Uneven surfaces increase oil absorption, affecting the taste. Regular inspection and replacement of blades are necessary maintenance tasks.

3. Rapid processing after slicing

Sliced potatoes exposed to air are prone to oxidation and discoloration. Blanching after slicing is usually performed to maintain a white color and improve texture.
