How Are French Fries Processed?

2024-12-05

How are french fries processed? The production process of French fries requires strict technology and efficient equipment. In a modern french fry processing factory, the process of processing French fries is usually divided into the following steps: washing and peeling, cutting, blanching, air drying, frying and de-oiling.

1. Washing and peeling

The first step in processing is to wash and peel the potatoes. This step is usually completed using a brush washing machine.

Washing: The brush washing machine thoroughly cleans the dirt and impurities on the surface of the potatoes by rotating the brush and spraying water.

Peeling: The hard brush on the machine rubs against the surface of the potatoes, and the flushing of water can quickly and effectively remove the potato skin while maintaining the integrity of the potatoes.

2. Cutting into strips

The potatoes are conveyed to the strip cutter for cutting. The strip cutter uses efficient blades to cut the potatoes into uniform strips as required, usually standard French fry shapes and sizes.

3. Blanching

Potato strips need to be blanched, which is done in a hot water blanching machine. Blanching can remove the starch on the surface of the French fries to prevent sticking during frying, and pre-cook the potatoes to improve the taste. The potato strips stay in the hot water for 2-3 minutes, depending on the thickness of the French fries and the process requirements.

4. Air drying

After blanching, the surface of the french fries needs to be air dried to remove excess moisture. Air drying can effectively reduce oil splashing during frying, while improving the taste and texture of the French fries. The air chiller uses strong cold air to quickly dry the moisture on the surface of the French fries, reducing the water content and preparing for the subsequent frying steps.

5. Frying

The core step of french fries processing is frying, which determines the flavor and crispness of the French fries. The frying machine puts the french fries into high-temperature oil for frying, and the time and temperature must be strictly controlled, usually between 170-190°C.

6. De-oiling

Fried french fries have a high oil content. In order to improve their health and taste, they need to be de-oiled. The de-oiling machine removes excess oil from the surface of the French fries through centrifugal action. This step not only reduces the greasy feeling of the finished product, but also improves the storage stability of the french fries.

Through the above processing steps, potatoes are transformed into golden, crispy and uniquely flavored french fries, becoming a favorite snack among people.
